Yummy Funfetti Cupcakes
The best part about making these cupcakes is that they’re delicious – and you get to use a cake mix! Cake mix cupcakes make it super simple to whip up a batch of cupcakes in a simple and fast way.
This means that you can also change up the flavor of the cupcakes easily just by changing up the flavor of the cake mix. While I tend to use vanilla or yellow cake mix, you can easily use strawberry, chocolate, and any other types.
Just know that if you use a darker cake mix, the sprinkles aren’t going to pop as much in the batter or when they’re baked.

Cupcake Ingredients:
- yellowcake mix
- cup water
- milk
- pure canola or coconut oil
- eggs
- French Vanilla Instant Pudding
- Cupcake liners

Frosting Ingredients
- salted butter, softened
- French Vanilla Instant Pudding
- cream cheese, softened
- milk, divided
- half and half (if needed)
- powdered sugar
- piping bag
- round frosting tip

Directions for Cupcakes:
Preheat the oven to 350 degrees. Spray or line a standard 12-cavity muffin tin.
1. Add half of the French Vanilla pudding and 1/3 cup of the milk in a large mixing bowl. Also, add the cake mix.
2. Add in the water, oil, and eggs. Using a mixer, mix on medium until the batter is mixed well.
3. Pour the batter into the muffin tin until each about 2/3 full.
Using a cookie scoop is a great way to do this without having to worry about a mess.
4. Bake for 18-20 minutes or until a toothpick comes out clean. Allow the cupcakes to cook before adding any frosting on top.
Directions for Frosting:
5. Mix the remaining pudding and milk until there are no lumps and it’s smooth.
6. Cream the butter and cream cheese, and beat until fluffy. (do this in a different bowl)
7. Mix the two mixtures together.
8. Slowly add in the powdered sugar, 1 cup at a time, until a peak starts to form. Add 1-3 tablespoons of the half and half in between the powdered sugar as you see fit to help balance out the texture.
9. Put the frosting into a piping bag.
10. Frost your cupcakes and then add the sprinkles on top.
Makes 24 cupcakes.
What is the best way to freeze cupcakes?
Since this recipe makes 24 cupcakes, you might want to freeze some to save them for later. Make sure to let the cupcakes cool down all the way, and then add them to a freezer-safe bag or container.
I also recommend that you don’t freeze cupcakes with frosting on them. You can unthaw the cupcakes later and then add the fresh frosting on top.

- 4 ounces of cream cheese, softened
- 2/3 cup milk, divided
- 3 tablespoons half and half (if needed)
- 4 cups powdered sugar
- 1 large piping bag
- 1 large round frosting tip
- Rainbow Sprinkles (Jimmies)
Instructions
1. Add in half of the French Vanilla pudding and 1/3 cup of the milk to a mixing bowl. Pour in the cake mix.
