Cookie Ingredients:
- 1 box Yellow Cake Mix
- 2 Eggs
- 1 cup Peanut Butter
- 1/2 cup Vegetable Oil
- 1/3 cup White Sugar
Peanut Butter Frosting Ingredients:
- 2 Tablespoons Butter, softened
- 2 Tablespoons Peanut Butter
- 1 cup Powdered Icing Sugar
- 2 Tablespoons Cream or Milk
- 1/3 cup Strawberry Jam
Directions:
- Preheat the oven to 350 degrees.
2. Add parchment paper to two baking sheets. Set them aside.
3. Mix the cake mix, peanut butter, eggs, and vegetable oil until smooth and completely combined. This will take about 2 minutes to do.
4. Place the white sugar into a bowl. Use a 1 1/2 Tablespoon cookie scoop to make the cookie dough balls, and then roll them in the white sugar until coated.
5. Place the coated cookie dough balls at least 3″ apart on the cookie sheets so that they don’t spread into each other while baking.
6. Use a fork to press down in a hatch pattern on the top of each cookie. This will flatten them as well. If you need to add some sugar to the fork so it doesn’t stick, do so.
7. Bake for 10-12 minutes until lightly golden. Let them cool for 2 minutes.
8. To make the peanut butter frosting, beat together the butter, peanut butter, icing sugar, and cream in a small bowl for 2 minutes. You can add more sugar or cream as needed to change the texture.
9. Spread 1 teaspoon of the peanut butter frosting on one side of the cookie, then top with ~ 1 teaspoon of strawberry jam.
10. Put a second cookie on top. Repeat with all cookies.
Makes approximately 30 cookies.
Can I use other types of jam?
Yes, you can! I really like strawberry jam, but you can use grape, apple, apricot, or any other flavor of jam that you want! This is a great way to change up the flavor of the cookies without having the change anything else.
How do you store leftover cookies?
These cookies make perfect leftovers! You just need to be sure to store them in an airtight container and keep them in the fridge.
If you want to add the frosting later, you can do that as well. Just store the cookies in an airtight container, and then when you’re ready to eat them, add the fresh frosting.
Can I freeze this cookie recipe?
If you want to freeze these cookies for later, you can. But I do recommend that you freeze them without adding the frosting.
This way, you can unthaw the cookies and then put fresh frosting right into the middle when you’re ready to eat.
