Eyeball Rice Krispies

Looking for something spooky sweet for this fall and Halloween season? You’re going to love these Eyeball Rice Krispies. Not only are they simple to make but they’re festive and fun, too. Anytime I can whip up something tasty and fun in the kitchen together with the kids, I’m so excited to make it happen.

There’s no denying that Rice Krispy treats are already tasty and delicious on their own but when you add in the fun eyeballs, it takes this treat over the top and makes it a fun Halloween treat as well.

I might also look food puns a bit so I’m constantly telling the kids that I’ve got my “eye” on them while they’re baking up this simple recipe.

They love the fact that it’s geared towards Halloween and they also like the fact that these treats are bite-sized and individual as well.

The fun thing about making this simple Halloween treat is that it’s not hard at all. Your kids can have fun placing the eyes and really making each one of these desserts look unique as well.

Give them full reigns in making this treat and see what they come up with. If they’re old enough to cook in the kitchen on their own, just be there to supervise and help them out.

If they’re young and need help, this is a great bonding moment in the kitchen that they’re certain to enjoy.

As you can see from the pictures, they’re going to be perfect however the kids decide to make them. These are perfect for a Halloween party at home or even a fun treat to share with your family and friends.

While some people might find them spooky, I don’t think they’re too scary to eat! They’re actually “scary” good!

This recipe makes 12 treats so there is more than enough to share!

Eyeball Rice Krispies Ingredients

To get started, just gather up the list of ingredients below.

  • 1 cup of green candy melts
  • 2 tablespoons of butter
  • 2 cups of miniature marshmallows (or regular marshmallows will work, too)
  • 3 cups of rice cereal
  • 1 teaspoon of coconut oil
  • 2 ounces of black rolling fondant
  • 3 – 4 ounces white rolling fondant

Directions

Start by lining your baking sheet with wax paper. You don’t want these to stick! Once done, set aside.

Next, you’re going to want to melt the butter over medium heat on the stove.

One the butter is good and melted, take and add in those delicious marshmallows and stir and it’s all melted together with no lumps. Take off that heat at that point.

This is when you add the rice cereal and make certain to mix it well to combine.

Once it’s cooled a tad bit, take and start rolling the mixture into circles. Then put them on the baking sheet.

Let them sit for about 30 minutes to get firm.

While they’re resting, it’s time to work on the fondant and you’re going to want to use a rolling pin and roll out the colors individually about 1/4 inch thick.

Use a #12 piping tip and put out 12 circles in each fondant color. The white fondant circle should be bigger than the black fondant.

Put the black circle on the white one.

Put coconut oil and candy melts in a bowl and microwave for 30-second increments, stirring each time until it’s melted.

Put the melted candy into the piping bag and cut a slit at the end.

Pipe out a circle on the treat and put an eye on top.

Let sit, and enjoy!

Trust me, these are so good and delicious. They’re going to be a new tradition in your house once Halloween rolls around!

If you want to make them ahead of time, just be certain to store them in a ziplock bag so they stay as fresh as possible.
